Ascorbic acid, i.e. vitamin C, is naturally found in fresh fruits and vegetables. It is also used as a food additive (E 300) to combat oxidation, for example in berry and fruit jams, jellies and marmalades.
Use 0,5–1 grams of ascorbic acid per 1 kg of fruit or berry preparation. Dissolve ascorbic acid in a small amount of water and add to the preparation when it’s otherwise ready.
